Ingredients
1 head of cauliflower
2 spring onions/1 shallot
2 gloves garlic, grated
1/2 thumb size of fresh ginger
1 chilli **optional
3-4 tbs of salt reduced soy sauce
500g of pork mince or thinly cut pork (or whichever meat you prefer)
1-2 large eggs beaten
1 carrot diced
1 cup of peas
1 capsicum diced
2 tbs of coconut/ olive oil
Method
wash all the vegetables

prepare all the vegetables, onion and garlic apart from the cauliflower

with the cauliflower, cut it off the head and place it in a food processor and blitz until in rice texture (it might need to be done in 2-3 lots depending how big the head is)

in a fry pan, put the oil in and let it heat up

add in the onion, garlic and ginger, saute it (add in the chilli if your wishing to add chilli)

add in the meat of your choice and brown it

add in the rest of the vegetables and let it cook through

add the soy sauce

in the fry pan push the mixture to half of the pan and then add in the beaten eggs and mix through the mixture

add in the cauliflower – as the cauliflower is finely cut there is no need to cook it beforehand

cook through the cauliflower until cooked
** If the mixture is looking a little dry while cooking add in some water or chicken/vegetable stock (1/2 cup)
