Ingredients
70g pecans
60g walnuts
50g desiccated coconut, plus extra for coating
75g pitted Medojol dates
80g raw carrot, cut into pieces
1/4 tps ground cinnamon
1/4 tps ground nutmeg
1/4 tps ground ginger
Method

place all ingredients into food processor and blend until well combined and sticking together

place extra desiccated coconut onto a plate and put aside

using wet hands, roll tablespoons of mixture into balls. Roll balls into desiccated coconut and place into fridge for 30 minutes before serving.
