Ingredients

2 eggs

1/4 Spanish onion

1/4 red capsicum
-
1 shallot
-
2 pieces of bacon
-
15g of feta
-
2 sprigs of parsley
Method
-
beat two eggs together add salt and pepper if desired
-
in fry pan with small amount of olive oil, lightly fry up the Spanish onion, shallot and capsicum
-
cut bacon into small squares and cook that off on its own

add beaten eggs to veggie mix and cook through
-
bowl up the egg scramble mixture, add bacon on top , finely cut parsley as a garnish and crumbled feta
